Garlicky Shrimp in Jalapeno Butter

Garlicky Shrimp in Jalapeno Butter is an amazing, versatile shrimp dish that’s made with garlic, jalapeno, fresh tomatoes, and butter.  It makes an excellent appetizer, shrimp tacos, or even shrimp pasta!

My natural market recently had wild-caught, USA shrimp on sale, and I couldn’t resist buying a couple pounds – some for now, and some for the freezer. 

As much as I love my shrimp scampi or shrimp enchiladas, I wanted to make something with the fresh ingredients I had on hand: tomatoes, jalapenos, garlic, and scallions.  The result was Garlicky Shrimp in Jalapeno Butter and it was to die for!

Garlicky Shrimp & Tomatoes in Jalapeno Butter

We all know that shrimp, garlic, and butter is a delectable match made in heaven.  Now imagine sautéing jalapeno in butter until it has softened and has infused the butter with warmth and a slight amount of spice, then add in the garlic and a couple of ripe Roma tomatoes.  The end result is absolutely amazing.  Garlicky Shrimp & Tomatoes in Jalapeno Butter

How to serve Garlicky Shrimp in Jalapeno Butter:

I ate my shrimp out of a bowl all by itself because it was that good, but it would make an excellent starter to a meal with some crusty French bread.  These garlicky shrimp would also make a perfect filling for tacos.  Add it to some Herbed Butter Garlic Rice!

NOTES:

  • If you’re going to make tacos, squeeze a little lime juice at the end and top the tacos with shredded cabbage, fresh cilantro, and a little cotija cheese!  Yum!
  • I used jumbo 16/20 shrimp for this recipe.  That means that there are 16-20 shrimp in a pound.  The “servings” will vary depending on if you’re eating the shrimp by themselves, in pasta, in tacos, etc.

Garlicky Shrimp in Jalapeno Butter

Ingredients
  

  • 1 lb. 16/20 jumbo wild-caught shrimp deveined, tails removed
  • 2 tbsp minced jalapeno
  • 2 Roma tomatoes diced
  • 6 garlic cloves minced
  • 5-6 tbsp. butter
  • 1/4 cup sliced scallions
  • salt & pepper

Instructions
 

  • Add jalapeno and butter to a large skillet over medium heat. Stir jalapeno around while butter melts (3-4 minutes). When jalapeno has softened, add the tomato and garlic. Season with salt & pepper. Sauté jalapeno, tomato and garlic for about 2 minutes and then push everything to one side of the skillet.
  • Season shrimp with salt & pepper. Add more butter to pan as needed and add shrimp to the other half of the pan. Shrimp do not take long to cook, just a couple minutes. Just as they turn pink, flip them over one by one with tongs to cook the other side. When shrimp have finished cooking through, add the scallions to the pan and combine the shrimp half of the pan with the jalapeno/tomato/garlic half. Taste for seasoning and eat immediately. Excellent with a loaf of crusty bread, with pasta, or in tacos! Enjoy!

    A pretty good recipe! It’s quite flavorful and filling. I even added some diced green capsicums and onion in there to give it even more pizzazz!
