Jalapeno Lime Shrimp

Succulent Jalapeno Lime Shrimp, marinated in a zesty, fresh jalapeno and lime marinade, are perfect for an easy weeknight meal!  Just sauté the shrimp and you’re ready for tacos or quesadillas, or go tapas-style with a loaf of crusty bread!

Jalapeno Lime Shrimp Quesadilla

My favorite things to make with Jalapeno Lime Shrimp are either shrimp tacos or quesadillas. 

The jalapeno, lime, and garlic infused in the shrimp is absolutely perfect for your favorite Mexican fare, however, I could definitely see me eating this over rice, as grilled shrimp kabobs, or bringing the pan to the dinner table with some crusty bread for a more rustic, family-style dinner.

To make shrimp tacos, I warm a tortilla, top it with shrimp and add salsa, cabbage slaw, and some cotija cheese.  If I have it, thinly sliced avocado is a nice addition. 

For my favorite, shrimp quesadillas, I take a flour tortilla and top it with lots of shredded cheddar and pepper jack cheese, add some chopped up shrimp and maybe some sliced jalapeno, sprinkle on a little more cheese and the other tortilla, then griddle it in butter until it’s golden brown and the cheese is melty.  It is divine!

  • Shrimp
  • Limes
  • Jalapenos
  • Garlic
  • Olive oil
  • Cumin, salt, pepper

How to make Jalapeno Lime Shrimp

  1. Simply marinate your shrimp with fresh lime juice, jalapeno, garlic, cumin, and either avocado oil or olive oil.  Let it marinate for about 20 minutes, then it’s good to go!
  2. Add shrimp to a skillet and sauté for a minute or two, then turn each shrimp over and cook another 2 minutes, or until they are no longer gray and have curled up.
  3. Use cooked shrimp in tacos, over rice, in burritos, or with a loaf of crusty French bread.

Another idea for these shrimp is to make burrito bowls!  Put a layer of Mexican rice on the bottom of a bowl, top it with this shrimp, guacamole or avocado, some sour cream, a little hot sauce or salsa, and garnish with fresh cilantro.  Yum!

How long are cooked shrimp good for?

Leftover shrimp can kept in an air-tight container in the refrigerator and used within 3-4 days.

NOTES: 

  • Make sure you use a non-reactive bowl (plastic or glass) when marinating.  Metal bowls have a negative reaction with acids in marinades.  These bowls are the ones I use for marinating, mixing, and storing.  
  • Don’t marinate the shrimp for too long or the lime juice will start to “cook” the shrimp.  Then you’ll have shrimp ceviche ;)

Ingredients
  

  • 1 lb. peeled and deveined jumbo or large shrimp
  • 1 tbsp. minced fresh jalapeno approximately 1 average jalapeno
  • 1 garlic clove minced
  • 1/4 tsp. cumin
  • 2 tbsp. olive oil or avocado oil divided
  • 2 limes the juice of
  • salt & pepper to taste

Instructions
 

  • Marinate shrimp in a glass or plastic bowl with the jalapeno, garlic, cumin, lime juice, salt & pepper, and one of the two tablespoons of oil. Stir to combine and set aside for 20 minutes.
  • After the shrimp have marinated for 20 minutes, heat the other tablespoon of oil in a large skillet. Dump the bowl of shrimp in the skillet, making sure each shrimp is laying flat. Cook for 2-3 minutes, then with tongs, turn each shrimp over and cook another 2-3 minutes. Shrimp are done when pink and no more gray is present.
  • Use shrimp in tacos, quesadillas, add to some pasta, or serve with a crusty loaf of bread. Enjoy!
