Garlicky Shrimp in Jalapeno Butter is an amazing, versatile shrimp dish that's made with garlic, jalapeno, fresh tomatoes, and butter. It makes an excellent appetizer, shrimp tacos, or even shrimp pasta!
Add jalapeno and butter to a large skillet over medium heat. Stir jalapeno around while butter melts (3-4 minutes). When jalapeno has softened, add the tomato and garlic. Season with salt & pepper. Sauté jalapeno, tomato and garlic for about 2 minutes and then push everything to one side of the skillet.
Season shrimp with salt & pepper. Add more butter to pan as needed and add shrimp to the other half of the pan. Shrimp do not take long to cook, just a couple minutes. Just as they turn pink, flip them over one by one with tongs to cook the other side. When shrimp have finished cooking through, add the scallions to the pan and combine the shrimp half of the pan with the jalapeno/tomato/garlic half. Taste for seasoning and eat immediately. Excellent with a loaf of crusty bread, with pasta, or in tacos! Enjoy!
