Sriracha Pickles

Get ready for my new favorite pickle recipe, Sriracha Pickles!  

These crisp, homemade pickles have the perfect combination of tangy, spicy, salty, and zesty! 

The addition of onion really complements the fresh cucumbers and sriracha hot sauce.

These spicy sriracha pickles are the perfect addition to burgers, sandwiches, BBQ platters, and charcuterie boards.

Ingredients needed to make this recipe (scroll down to recipe card for complete recipe):

  • Cucumbers (Persian, snacking, or Kirby)
  • Onion 
  • Sriracha
  • Water
  • White vinegar
  • Pickling/Canning salt
  • Black peppercorns

How to use Sriracha Pickles?

Sriracha pickles add wonderful flavor and crunch to whatever you add them to.  Some delicious ideas are:

  • They make a great addition to sandwiches and burgers.
  • Chop them up for a topping on hot dogs or brats.
  • Excellent addition to cheese platters with crackers, dried fruit, hummus, nuts, and salami.
  • Dice them and add them to egg salad or tuna salad!
  • Add minced pickles to deviled eggs.
  • Serve them with your favorite BBQ!

What kind of cucumbers are best for making pickles?

I like to use Persian, “snacking”, or Kirby cucumbers for pickling. 

Unlike traditional, slicing cucumbers, they have thinner, non-waxy skins.  Plus, they have less seeds & water than traditional cucumbers, so they’ll stay crunchier longer.

How long are these homemade pickles good for?

When using best practices, these pickles should last up to a month in the fridge.

Ingredients
  

  • 1 lb. cucumbers, sliced Kirby, Persian, or snacking
  • 1/2 yellow onion sliced
  • 1 tsp. black peppercorns
  • 1.5 tbsp. sriracha
  • 1.25 tbsp. pickling/canning salt
  • 1.5 cups water
  • 1.5 cups white vinegar 5% acidity

Instructions
 

  • Add the water, vinegar, and pickling salt to a sauce pan and bring to boil. Stir so that salt dissolves, turn off heat and set aside.
  • Distribute the black peppercorns, cucumber slices, and onion equally amongst the pickle jars/jar. Add sriracha to the top of the veggies.
  • Pour the pickling brine into a liquid measuring cup, then pour the brine over the veggies in the jar. Make sure the brine covers the pickles.
  • Let the pickles sit on the counter and come to room temperature before putting the lids on, then refrigerate. After 1-2 days, the pickles will be ready and should last at least a month in the fridge.
