Slow Cooker Greek Lemon Potatoes

Seasoned with flavorful Greek ingredients like fresh lemon juice, garlic, oregano, and olive oil, you’re going to love the irresistible taste of these slow cooker potatoes!

What’s even better is that there is barely any work involved in making them!  Simply toss all the ingredients in your slow cooker and that’s it!

This is a great hands-off side dish recipe for those days when you need a super easy side to throw together or when your stove’s burners are already full. 

These lemony potatoes are also great in the summer when you don’t want to turn your oven on!

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Potatoes – I like red potatoes for this recipe
  • Garlic
  • Olive oil
  • Dried oregano
  • Lemons
  • Salt & pepper
  • Chopped parsley – optional garnish

 

What kind of potatoes are best?

I like red potatoes for this recipe.  Their waxy texture holds up nicely in the slow cooker.  Yukon gold potatoes would be good too.

These flavorful potatoes make the perfect side dish to roast chicken, grilled fish, garlicky shrimp, or pita pockets filled with your favorite Mediterranean ingredients. 

We also like them with Spicy Baked Chicken Legs and Bacon-Wrapped Spinach & Goat Cheese Chicken.

How long are cooked potatoes good for?  

Cooked potatoes can be kept in an air-tight container in the refrigerator for 3-4 days.

They can also be frozen, however, their texture might change once thawed, so the quality may not be the same.

NOTES:

  • This recipe is naturally vegan, however, you could add a tablespoon or two of butter to the slow cooker when the potatoes are done cooking to add a nice, rich flavor.
  • Lemon is such an integral part of this recipe, please make sure you’re using fresh lemons.  Plastic squeeze bottles of lemon juice from the store are not the same.
  • 1 lemon = approximately 1 ounce of lemon juice.  If you love lemon like I do, feel free to the full 2 ounces (2 lemons).  Use less if desired.

Equipment

  • 5 quart slow cooker

Ingredients
  

  • 5-6 red potatoes (approx. 1.5-2 lbs)
  • 6 garlic cloves minced
  • 1/4 cup olive oil
  • 2 tsp. dried oregano
  • 1/2 tsp. sea salt
  • black pepper to taste
  • 1-2 oz. lemon juice see "notes"
  • chopped fresh parsley optional garnish

Instructions
 

  • Cut each potato in half length-wise, then in half again length-wise, then cut the potatoes into largish, 1"-1.5" chunks. Add the potatoes to the slow cooker.
  • To the potatoes, add the rest of the ingredients. If you love lemon like I do, feel free to use the full 2 oz. of lemon juice. Use less if desired. Toss everything together so all the potatoes are seasoned.
  • Cook the potatoes on low for 4 hours. If you have the opportunity to, I like to stir them at the half-way point. If desired, garnish the finished potatoes with some fresh, chopped parsley. Enjoy!

  • I haven’t made these yet, so no star rating, although they look great and I love Greek and Greek-style food. The lemony addition will work great with poultry and fish especially. I have one question before I start. Are the browned potatoes in the picture the same potatoes after the cooking period? I didn’t realize a brockpot could brown food so noticeably. I’m wondering if that is what to expect in the finished product.
