Lemony, garlicky, and so full of flavor, you're going to love this Slow Cooker Greek Lemon Potatoes recipe! Simply toss everything in the slow cooker and a delicious, easy side dish is done!
Cut each potato in half length-wise, then in half again length-wise, then cut the potatoes into largish, 1"-1.5" chunks. Add the potatoes to the slow cooker.
To the potatoes, add the rest of the ingredients. If you love lemon like I do, feel free to use the full 2 oz. of lemon juice. Use less if desired. Toss everything together so all the potatoes are seasoned.
Cook the potatoes on low for 4 hours. If you have the opportunity to, I like to stir them at the half-way point. If desired, garnish the finished potatoes with some fresh, chopped parsley. Enjoy!
