Cajun Egg Salad

Cajun Egg Salad in a sandwich

This Cajun Egg Salad has everything I love about traditional egg salad, but also has lots of Cajun spices, herbs, and scallions to make it even more flavorful.

I’ve been wanting to create an extra flavorful version of my other recipe, homemade egg salad, and this egg salad recipe is it!  I love them both, but it’s nice to change it up now and then.

This recipe contains a lot of spices, but it’s not super spicy. 

The amount of heat you add to this is completely up to you.  If desired, you could make it spicier with some Louisiana-style hot sauce or extra cayenne pepper.

 Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Hard-boiled eggs (recipe for perfect hard-boiled eggs below)
  • Mayo
  • Dijon mustard
  • Cayenne pepper
  • Onion powder
  • Smoked paprika
  • Black pepper
  • Salt
  • Dried thyme
  • Scallions
  • Optional add-ins (relish, celery, onion, pickle, hot sauce)

While you could use store-bought Cajun seasoning in this recipe, you can’t control the amount of salt that is in it.  For this reason, I like to make my own.  You can always add more salt, but you can’t take it out.

How to serve Cajun Egg Salad

This egg salad makes a wonderful sandwich on bread, hoagie rolls or bagels.  It is also great atop salad greens or served open-faced on toast.

I like to serve my egg salad sandwiches with some garlic dill pickles on the side.

Some optional additions to this egg salad:

  • Louisiana-style hot sauce
  • Relish or pickles
  • Diced onion
  • Minced celery

How long is egg salad good for?

Store egg salad in an air-tight container in the refrigerator and use within 3-4 days.

How to make perfect hard-boiled eggs

Follow these steps to make hard-boiled eggs that will come out perfect every single time:

  1. Place your eggs in a saucepan and carefully cover with cold water, then put the lid on the saucepan.
  2. Turn heat to high and as soon as the water comes to a rolling boil, turn off the heat, LEAVE LID ON, and set a timer for 12 minutes.
  3. When the timer goes off, place the eggs in an ice bath and let chill out until cold.  Cold eggs are easier to peel!

Equipment

Ingredients
  

  • 6 hard boiled eggs (see directions in post for perfect hard-boiled eggs)
  • 1/2 cup mayo
  • 1 tbsp Dijon mustard
  • 1 1/2-2 tbsp sliced scallions
  • 1/8 tsp cayenne pepper add more to make it more spicy
  • 1/8 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 pinch white pepper
  • 1/4 tsp dried thyme rubbed between your hands
  • salt & black pepper to taste
  • Optional additions Louisiana-style hot sauce, relish, pickles, celery, onion

Instructions
 

  • Chop and mash hard boiled eggs to your desired consistency. Add all the other ingredients and mix until combined. Make it extra flavorful by adding your favorite additions: hot sauce, celery, onion, pickles, or relish.
