Ground Turkey Cabbage Soup

Ground Turkey Cabbage Soup is a delicious, veggie-packed soup filled with good-for-you ingredients!  Lean ground turkey, cabbage, and plenty of other fresh vegetables, all in a super flavorful broth make this easy, one-pot recipe a family favorite!

This Ground Turkey Cabbage Soup has been on repeat in my house all winter long! 

I love it because it’s a healthy, one-pot recipe that’s so full of flavor!  Bonus – it’s ready in under 40 minutes!

Another thing I love about this soup is that my anti-soup husband and kids all love it!  A healthy soup the whole family loves?  That is winning!

The combination of sautéed fresh veggies combined with cabbage and ground turkey with herbs and spices makes this soup so flavorful and also good for you. 

Better than Bouillon adds another wonderful level of flavor to this soup!

Ingredients needed to make this recipe (scroll down to recipe card for complete recipe):

  • Butter
  • Carrots
  • Celery
  • Yellow onion
  • Garlic
  • Ground turkey
  • Chicken broth
  • Cabbage
  • Better than Bouillon – chicken flavor
  • Seasonings – dried thyme, bay leaves, white pepper, salt, black pepper

How to make this soup?

  1. Making this soup is as simple as sautéing the carrots, celery, onion, and garlic in butter to soften them and bring out their flavors. 
  2. Then add the herbs and ground turkey.  When the turkey is cooked, add the chicken broth, bouillon, and cabbage. 
  3. Simmer until the veggies have softened.  That’s it! (full recipe & instructions are below)

How to serve Ground Turkey Cabbage soup?

Soup and some sort of bread go hand-in-hand together if you ask me! 

We usually serve this with buttered French bread, which is AMAZING dipped in the savory broth, but we have also had it with sourdough rolls and Texas Toast.  All great options!

Do I have to use ground turkey?

Ground chicken would be a great healthy option if you don’t have ground turkey. 

You could also use ground pork, but it’s inherently greasy and not as healthy.

How long is turkey soup good for?

Once cooled, refrigerate leftovers in an air-tight container and use within 3-4 days.

  • Better than Bouillon is my secret weapon to add wonderful flavor to the soup.  If you don’t have any, you can get it HERE from Amazon.  It comes in Roasted Chicken, Organic Roasted Chicken, and Reduced Sodium Roasted Chicken.
  • Although I add a can of diced tomatoes to the majority of my soups, I think the flavors in this soup would shine best on their own, without tomatoes.

Equipment

  • Stock pot/large soup pot

Ingredients
  

  • 2-3 tbsp butter
  • 1 1/2 cups sliced carrots (approximately 2 carrots)
  • 3/4 cup sliced celery (approximately 3 celery ribs)
  • 1 yellow onion sliced
  • 2 garlic cloves minced
  • 1 lb. ground turkey
  • 2 tsp. dried thyme rolled in your hands
  • 4 cups chicken broth (32 oz)
  • 2 dried bay leaves
  • 5 cups chopped cabbage (approximately 1/2 head)
  • 1 tbsp Better than Bouillon Roasted chicken flavor
  • 1/8 tsp. white pepper
  • salt & pepper to taste

Instructions
 

  • Sauté carrots, celery, onion, and garlic in butter in a stock pot or large soup pot for about 5 minutes, stirring occasionally.
  • Add dried thyme and ground turkey to the vegetables, breaking up the turkey into small, bite-size pieces. Stir turkey occasionally and continue cooking until the turkey is no longer pink, about 5-6 minutes.
  • Add the chicken broth and Better than Bouillon to the pot and stir the bouillon to make sure it dissolves. Add the cabbage, bay leaves, and white pepper. Taste for desired amount of salt and black pepper you want to add. Better than Bouillon is salty, so make sure you taste the soup before you add the salt.
  • Bring the soup to a boil, once boiling, reduce to a simmer for about 30 minutes, or until the vegetables have reached your desired texture. Excellent served with a nice crusty bread! Enjoy!

    This was so easy and delicious. The ground turkey made the soup more substantial. I added a can of fire roasted tomatoes to add a bit of acid and a 1/2 t of red chili flakes. We loved this soup. Thank you

    Wow. I just made it. I added two thick cut pieces of bacon in the saute. Also…I didn’t have broth. So,..I made it with Better than Bouillon. I can’t stop eating it. Very good. Thumbs up! I also used the entire cabbage head and 6 cloves of garlic.

    I had half a cabbage leftover from another recipe I needed to use…so figured this soup would be a perfect use of it. Changes I made include doubling the garlic and added a can of fire roasted tomatoes and about a tablespoon of tomato paste. I love thyme, so definitely enjoyed that in this recipe! Such a hearty soup!
