Equipment

  • 5 quart slow cooker

Ingredients

  • 1 1/2 lb. baby potatoes (24 oz. bag)
  • 1/4 cup olive oil
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried thyme
  • 1/4 tsp. dried rosemary
  • salt & pepper to taste
  • 2 tbsp. butter
  • 2-3 tbsp. grated parmesan cheese

Instructions

  • To make the potatoes, toss them in a slow cooker with everything except for the butter and parmesan.  Mix to combine everything and put the lid on. Cook for 3 hours on high.
  • When the potatoes are done, add the butter and stir.  I also like to add a little salt & pepper here, but season to your own tastes.  They're ready when the butter is melted.
  • I like to spoon a little of the butter from the slow cooker over the plated potatoes and sprinkle some parmesan cheese on top. Enjoy!
