Fresh noodles stir-fried with lots of garlic, chili oil, tangy kimchi, sliced scallions and a delectable soy/sesame sauce are combined to make Spicy Kimchi Garlic Noodles. A perfect side dish as-is, or add vegetables and your favorite protein for a complete meal.
In a small bowl, whisk together the soy sauce, hoisin, sriracha, sugar, sesame oil, pepper, and salt. Set aside.
In a wok or large skillet, add chili oil and garlic. Sauté on medium/medium-high for about 2 minutes, stirring constantly so the garlic doesn't burn. Add the yakisoba noodles, using a utensil to loosen them up so they're no longer stuck together. Sauté the noodles for 2-3 minutes, then add the sauce and kimchi. Sauté for about 2-3 minutes or until everything is heated through. Mix in sesame seeds and scallions and serve immediately. Garnish with more sesame seeds and scallions sprinkled on top. Enjoy!
