Easy Slow Cooker Cheesy BBQ Chicken

For those days when you just want to slap the easy button!  Easy Slow Cooker Cheesy BBQ Chicken = tender chicken that cooks in your favorite BBQ sauce, gets smothered in melted cheese and topped with sliced scallions.  Perfect over mashed potatoes or shredded for sandwiches.  It’s an easy dinner the whole family will love!

If you’re a fan of easy dinners and/or BBQ sauce and melted cheese, I’ve got you covered.  Easy Slow Cooker Cheesy BBQ Chicken isn’t just easy, it’s stupid easy. 

Whether you only have 10 minutes to get dinner in the slow cooker or you can barely make toast or boil water, you can do this!

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Chicken
  • Garlic powder
  • BBQ sauce
  • Shredded cheese
  • Scallions

How to make this recipe:

  1. Simply put the chicken in your slow cooker and pour your favorite BBQ sauce over it.  
  2. After a couple hours, add the shredded cheese and scallions, put the lid back on and let the cheese get all melty and gooey and dinner is done!

 

 

 

While this meal is almost impossible to mess up, I can’t emphasize enough the importance of a good BBQ sauce. 

There is a plethora of different regional variations out there, but I think the best type of BBQ sauce for this dish is a smoky, peppery sauce that really complements the melted cheese. 

One of my favorites for this chicken is Kingsford Smoked Hickory BBQ Sauce.  It’s not too sweet, perfectly smoky, and has a great, well-balanced flavor.

How to serve Easy Slow Cooker Cheesy BBQ Chicken

This chicken is great as either a main course or shredded for other uses.  Some of our favorite ways to serve it are:

  • With a salad and either tater tots, onions rings, or French fries
  • Alongside Savory Chicken Rice
  • Served on top of mashed potatoes
  • Add the chicken to hamburger buns and make delicious BBQ chicken sandwiches!

Equipment

  • 4-5 quart slow cooker

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • garlic powder
  • salt & black pepper
  • 1 cup BBQ sauce
  • 1.5 - 2 cups shredded cheddar cheese
  • Sliced scallions

Instructions
 

  • Place chicken breasts in slow cooker and season with garlic powder, salt, and black pepper. Pour BBQ sauce over chicken breasts, put lid on the slow cooker and cook on high for 2-3 hours or low for 3-4 hours.
  • In the last 10 minutes, add the shredded cheese to the top of the chicken, sprinkle sliced scallions over everything and put the lid back on for 10 minutes. Serve when cheese is melted.
  • * Perfect with tater tots, onion rings, and mashed potatoes, or shredded for BBQ chicken sandwiches*

    • Hi there! I haven’t tested this recipe with butterflied chicken breasts, but it sounds good! Especially put on a hamburger bun! Enjoy!
