8 Recipes for Lemon Lovers

The bright, citrusy, tart flavor of fresh lemon juice adds such a wonderful flavor component to not only desserts, but soups, salads, and more!  If you enjoy fresh lemon, you’ll enjoy these 8 Recipes for Lemon Lovers!

Besides cheese, carbs, and pickles, my other foodie love language would definitely be lemons! 

Their bright, tangy flavor just adds a burst of happiness to whatever you put them in. 

I know there are a lot of other lemon-loving people out there, so these recipes are for us!

1) Lemon Raspberry Bundt Cake

There’s so much fabulous lemon flavor in this cake!  This easy-to-make cake has a beautiful ribbon of fresh raspberry puree throughout that totally complements the lemon flavor. 

Instead of an icing, the lemony syrup kind of soaks down into the cake, so it’s super moist!

 

2) Slow Cooker Lemon Garlic Chicken & Veggies

This is a great one-pot wonder!  Just throw everything in the slow cooker and dinner is done.  I like to add potatoes, green beans, and plenty of garlic!

 

3) Lemony Greek Chickpeas 

I created these chickpeas based on a product that I love at Trader Joe’s.  Since nothing at Trader Joe’s stays forever, I decided to recreate them myself! 

These legumes are lemony, garlicky, and so delicious with your favorite Mediterranean foods.  I like to serve them with Greek chicken wraps and a side salad.

 

4) Slow Cooker Lemon Curd Cake

Who wants to turn on the oven and bake a cake in the middle of summer?  Not me!  That’s where Slow Cooker Lemon Curd Cake comes in handy! 

Simply take boxed cake mix and its necessary ingredients along with some wonderful lemon curd and put it in your slow cooker!  This delightful cake is extra delish when topped with powdered sugar and either whipped cream or vanilla ice cream!

5) Mediterranean Balela Salad

This is a fresh, healthy salad made with tomato, chickpeas, fresh parsley, onion, lemon juice, and spices.  It’s so refreshing in the summer! 

I like to serve this as a side dish to kabobs with hummus and pita bread.

 

6) Slow Cooker Lemony Chicken & Barley Soup

This slow cooker recipe is a wonderfully light soup that’s great all year long. 

Made with baby spinach, onion, garlic, chicken, barley, lemon juice, and spices, this slow cooker meal is both healthy and flavorful!

7) Easy Lemon Cream Cheese Tarts

The combination of lemon and a creamy element is absolutely irresistible to me!  These little tarts are similar to cheesecake, but have a softer, creamy, more luscious texture. 

I use both lemon juice and zest to give these mini desserts a big boost of lemon flavor!

 

8) Lemon Basil Vinaigrette

This a delectable salad dressing that’s popping with bright flavors from fresh basil, garlic, and zippy lemon! 

Fresh lemon juice is used here instead of vinegar to give the dressing its acidic component.  Cheaper, healthier, and way more fresh and delicious than store-bought salad dressing!

NOTES:

  • Store-bought plastic, squeezable lemons are NOT a suitable substitute for real lemon juice.  They contain preservatives and other wonky ingredients that just don’t belong.  They also don’t have the same flavor.  Real, fresh lemon juice is the only way to go!
