My mom always made corned beef and cabbage when I was a kid.  I think it had more to do with corned beef going on sale than celebrating St. Patrick’s Day.  Regardless, as an adult I adopted the tradition and started making it for my family.  

The problem?  I’m the only person in my family that likes corned beef and cabbage!

I do understand that a pickled meat isn’t for everyone.  I also understand that soggy cabbage may not appeal to a lot of people.

1. The Ultimate Corned Beef Bagel Sandwich

Sautéed onions, pan-fried corned beef slices, melted cheese, and garlicky dill pickles all layered between a toasted Everything bagel with a creamy mustard spread.  I cook a corned beef in a slow cooker and use slices of that to make this sandwich from the leftovers.  So good!
