Curry Spiced Roasted Carrots

Curry Spiced Roasted Carrots are the perfect way to add some spice to your life!  Fresh carrots perfectly seasoned with warm spices like curry powder, turmeric, and garlic make a super flavorful vegetable that is the perfect side dish for fall!

I was at Trader Joe’s recently and spotted a bag of gorgeous, organic, multi-colored carrots that I just couldn’t resist. 

It included white carrots, yellow carrots, purple carrots, and the traditional orange variety. 

The juxtaposition was so pretty and esthetically pleasing, I just had to have them, so in my cart they went – with gnocchi, gyoza, and my other 10 Favorite Products at Trader Joe’s.

Planning what I wanted to do with these beautiful root vegetables reminded me that carrots are inherently sweet when you cook them, so I was really being drawn towards the warm, earthy flavors in my spice rack. 

Curry powder, ground turmeric, and garlic are perfect because their strong, savory, warm flavors definitely complement carrots’ sweetness. 

Totally optional, but I like to add a little cayenne pepper for just a slight kick.

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Carrots
  • Olive oil
  • Curry powder
  • Turmeric
  • Garlic powder
  • Cayenne pepper (optional)
  • Salt, pepper

How to make Curry Spiced Roasted Carrots

  1. After slicing the carrots, add them to a large mixing bowl with olive oil and all the spices.
  2. Arrange the seasoned carrots on a baking sheet and bake for about 15 minutes.  Enjoy!

After roasting the carrots in the aromatic spice blend, you get a veggie so full of flavor! 

They’re naturally slightly sweet, and the addition of the earthy spices gives them a delectable savory component that just makes them irresistible.

How to store cooked carrots?

Store leftover carrots in an air-tight container in the refrigerator for up to 3-4 days.

NOTES: 

  • To maintain all their nutritive value, I did not peel the carrots.  Plus, I like their rustic look when left unpeeled.
  • I did not notice a big difference in the flavors of different colored carrots.  If all you have is traditional, orange carrots, you’ll be just fine!

Ingredients
  

  • 6-8 large carrots cut in half, then cut each in half lengthwise
  • 2 tbsp olive oil
  • 1/2 tbsp curry powder
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
  • couple dashes of cayenne pepper optional
  • salt & pepper

Instructions
 

  • Preheat oven to 400° and either grease a baking sheet or line a baking sheet with parchment paper or foil.
  • In a small bowl, add olive oil with all the seasonings and mix well. Add carrots to a large bowl and pour the oil over them and mix until carrots are well-seasoned. Add the carrots to your prepared baking sheet and bake for 15 minutes or until tender. Enjoy!

    Tried these roasted curry carrots last night and they were delicious. My wife says she doesn’t like curry or turmeric, but loved these carrots. I haven’t told her what was on them..
